Unfortunately DoudouLinux hasn't been designed to be installed in several languages, so you won't be able to choose language at boot. However we'll need to be able to do this in the future because we're looking at releasing a multi-language DVD.

Anyway, in your case, you just need the Spanish version of DoudouLinux since English is the default language of every application. The difficulty is to be able to choose English instead of Spanish, which is the default. There is a boot parameter that tells which language to use. It is possible to add an entry in the very first boot screen with a modified language. Of course you can't do this if you're using a Live system, unless you uncompress your live medium, change the boot menu, then re-compress the live medium. We currently have no tool to do this, this is the main issue.
